Pork shoulder sliced thin and marinated in achiote, guajillo and a little orange.
Stacked by hand on the trompo, one layer at a time. Pineapple on top, like it should be.
Shaved straight off the spit onto a fresh tortilla. Onion, cilantro, a sliver of piña.
Tomatillo, serrano, and something we won't tell you. The dangerous one.
Chile de árbol, roasted. Smoky, builds slowly, sneaks up on you.

Masa pressed and cooked on the comal starting at 8 a.m. You can watch through the window. If we run out, we make more. If the masa runs out, tacos are done for the day.
My dad got the nickname "El Güero" as a kid and it stuck. So did his salsa recipe. We still make it every morning, and we still won't tell you what's in it.
